So, here I am with a food blog. And you’re sitting their saying, wait, isn’t there somewhere along the lines of 74 billion food blogs populating the internet? Well, I have not had the time to count but that sounds about right. So, why did I decide to start a food blog? Well, let me explain.
In the Beginning…
Well, not so much the beginning but my late teens and early 20’s. I was a fat kid. Not obese but a healthy level of fat. When I graduated college in the summer of 2007, I stepped on a scale for the first time in years and was faced with the fact that I weighed 222 pounds. TWO HUNDRED AND TWENTY TWO!! I stand slightly over 6′ 1″ and that put me firmly in the “well, you sure are fat” category. It was that day that I decided I needed to make a change, get healthy and lose this weight. I started to work out a bit and stop drinking so much damn beer. I ended up losing about 15 or so pounds over the next few years, but I was never really enamored by my progress. It wasn’t until I started looking at what I was eating (and portions) before I started to see some great results. As I write this, I hover in the 185 pound range putting me in the “well, I could lose a few pounds” category. A much better improvement if I don’t say so myself. Now, I can see you sitting there, reading along and saying, “Well, that’s great and all, but what the hell does this have to do with a food blog?” First off, that’s kinda rude. Second, I’m not done yet.
Alton Brown. He is the man who turned food from a daily necessity to something I genuinely enjoyed thinking about, cooking and serving to others. He inspired me to try different ways of cooking. To throw away all uni-taskers. To be proud of what you put on the table for friends, family or girlfriends. It’s no hyperbole to point to Alton as the person who taught me that food can be a passion. It wasn’t so much the food he put together (although much of it is great), it was the way he made it accessible for everyone and his delivery. I hope to channel some of Alton into this blog – teaching, having fun and, of course, enjoying some great food. Seriously though, if you’ve never heard of Alton or his show Good Eats, stop right now and go to YouTube and check out some of his episodes – they are fantastic.
I didn’t start this to show you the best recipe for chocolate chip cookies or a chicken tetrazzini. There are enough blogs out there that will give you recipes for those (and do a much better job of it than I). My intention is instead is to give you tools, tips, techniques and frameworks for creating great food. I find recipes extremely limiting and a tad boring. They’re all so regimented and strict as to what you should put in them, when and how. Wouldn’t it be better to have a framework, a guide if you will, that would enable to you to create hundreds of recipes after you understood some basic culinary skills. For example, you could have a recipe book a thousand pages long of different salad dressings (I got bored just typing that). Instead, wouldn’t it be great to learn the process and ratios of a good salad dressing that would enable you to create your own combinations and creations? I certainty think so.
What I Eat
I eat simple. Most nights I’ll have a salad or a pork chop with some brussel sprouts. Other times, I like to enjoy a nice, juicy burger. Or maybe some spaghetti squash. Instead of the stereotypical meat and potatoes, you can find me enjoying some meat and vegetables. While I don’t like to call what I eat “Paleo” it does sort of follow that line of thinking. (If you are just coming across the term paleo, here is a good primer of what a die-hard paleo eater consumes.) Mainly, I eat as many as fruits and vegetables as I want while eating a sizable amount of protein each day. Doesn’t really matter what kind of protein – although I’m quite partial to steak, sausages and salmon. At the same time, I try to not overeat on nuts and dairy. And for the most part I avoid carbs so don’t expect to see any pasta or potato salad on this site. That’s about it. I don’t go crazy and count calories, weigh my portions or anything like that. I just eat until I’m full and that’s that. I’d be remiss if I didn’t also mention that I happen to cheat and quite often. I sure do love some burger and fries or some fish and chips. The point is that five or so days out of the week, I eat well. Other times, well, I eat like a fat kid. Alright, it’s about time I got to the point and put this all together for you.
Who is this for?
I decided to create this blog for those of you out there that is uncomfortable being in the kitchen. Those that have never experienced butterflying a pork chop, scaling a fish, putting together an awesome stir fry or making their own salad dressing. Getting conscious about the food I put in my body led to me dropping over 30 pounds. Now maybe you don’t have any weight to lose, but maybe you’ve been wanting to impress the girl in apartment 12B. Or you’ve wanted to stop spending so much damn money going out to eat every day. Or you’re tired of your friend Betty always getting to host the parties because she can bake a few chickens. Whatever the reason, I want you to get pumped on creating great food, for yourself and others. Nothing in here will be fancy or take years to master. I want this site to be easily accessible to everyone, from professional chefs to those that don’t know a whisk from a spatula. To that point, if you have any questions, ASK. Get engaged and get involved. Together, with just a little bit of help from me, you’ll be impressing that girl in 12B, eating well and having a great time doing so. Admit it, you’re a little bit excited. That’s okay, so am I!
A Little More About Me
What else to I do besides cook and eat? Great question! I love college football. Some might call me obsessed, but I just say that life is missing a certain something between February and August – namely football. In addition, I love getting outdoors. My girlfriend and I go on frequent day hikes around the Bay Area. During the summer months, I’ll spend a few weekends going on backpacking trips and in the winter, I’ll be up in Tahoe skiing. I’m not one for water sports (I grew up in landlocked states), but just about any other outdoor activity I enjoy. I also love real estate – that is how I pay the bills right now.
